2018 Silver Lake Reserve Cabernet
Tasting notes
Medium-bodied and smooth, this wine is easy drinking and is specially blended to pair with a wide range of foods while delivering surprising complexity and richness. Our Reserve Cabernet Sauvignon is cherry-red in color with an aroma of chocolate, cola, and dark berry. Flavors of black cherry, chocolate and spice dominate, with silky tannins on the finish.
Production notes
Ripe Cabernet Sauvignon grapes were harvested, crushed and de-stemmed, and then transferred to a stainless steel tank where the juice was inoculated with a selected yeast strain. The wine was fermented at ~80oF for 14 days using pump-overs for gentle tannin extraction. Upon completion of secondary fermentation, the wine was transferred to Barrels. The 2018 vintage was an average growing degrees year for the AVA. Average temperatures throughout the spring, summer, and fall allowed for consistent and even ripening throughout Washington State. Cabernet Sauvignon, usually late to ripen, came off the vines about 1 week later than normal harvest time. This produced very densely colored, balanced fruit, along with excellent acid retention for overall wine balance. The 2018 Silver Lake Reserve Cabernet Sauvignon shows excellent dark red fruit flavors with an extended and smooth finish.
