2017 Silver Lake Sauvignon Blanc
Tasting notes
A light, crisp and refreshing white wine with notable acidity, this wine evokes scents of grapefruit and green melon. Zesty flavors of citrus and tropical fruits are accented with a mild herbal finish. This is a very versatile food wine that can complement everything from shellfish and Caesar salad to fried chicken and aged Jarlsberg cheese.
Production notes
Ripe Sauvignon Blanc grapes were harvested, crushed, and pressed to stainless steel tank where the juice was inoculated with a selected yeast strain. The wine was fermented cool (~54oF) for 45 days to help preserve fresh fruit favors. Upon completion of primary fermentation, the wine was stabilized for acid and protein. The wine was then prepped for bottling through ‑ filtration and bottled. The 2017 vintage was one of the warmer vintages in recent history for the Rattlesnake Hills AVA. An unseasonably warm spring led to a warmer than average summer, and the warm temperatures continued through early fall. This led to earlier than normal ripening for white varietals such as Sauvignon Blanc. Due to the warm vintage, the 2017 Sauvignon Blanc expresses excellent tropical fruit favors with just slightly less acid than normal.
